At the heart of Skye Canyon sits Skye Center, the community hub for gatherings, events and now the best coffee in Las Vegas. Always welcoming new and existing residents, Skye Center is proud to announce that it is the new home for Aspire Coffee House. This previous “pop-up” only coffee company has taken an official residency at the space previously known as Skye Bistro.
Having launched in February 2020, Aspire Coffee was inspired by the lack of quality ingredients, organic coffees and products being served around town – from the syrups being used to the actual coffee beans. So, instead of continuing to search for that perfect cup of coffee or healthy snack, Aspire created it themselves and is proud to serve both locally and organically sourced coffee, while making all syrups in-house with only organic ingredients with no refined sugar.
“We decided to start the company based out of a trailer to get the word out,” explains Lindsi Lillis and Mandie Gilbert, co-founders of Aspire Coffee House. “Now, with the city opening back up, we thought that it was the best time to open our first brick and mortar store, and Skye Canyon is the perfect choice with its focus on health, fitness and their mission to help their residents live a healthy lifestyle.”
Created specifically for Skye Canyon, the restaurant is also open to the public. The menu is both healthy and delicious and features noteworthy items such as avocado, caprese, chocolate hazelnut berry, and banana almond butter toasts, daily collections of pastries, keto-friendly cookie dough bites, and lemon bars, plus smoothie beverages and bowls.
No detail has been neglected by this power-house team. The coffee is poured into eco-friendly cups, the coffee collection offers superfood drip coffee, locally roasted nitro cold brews, lattes upgraded with turmeric and matcha, plus organic teas, hot cocoa, and a kids menu featuring honey lavender, snickerdoodle, and white mocha flavored milks.
Aspire Coffee House is now open daily from 7 a.m. to 2 p.m. with seating available inside and out on the patio. Aspire Coffee House can be found at Skye Center: 10111 W. Skye Canyon Drive.
